
Beets
Usage: Try our root vegetable tacos with chimmichurri sauce using other ingredients from your box. Too many beets? Try pickling them! This can stretch your beets all year as a refreshing addition to salads and sandwiches. Bake on a sheet pan with other root vegetables. Use in baking to add sweetness and nutrition to chocolate baked goods. Make a colorful risotto or beet salad recipe. Sauté beet greens with garlic and salt to remove the bitterness and include in a rice or pasta dish.
Storage: Cut the greens off so they don’t pull moisture from the root. Store unwashed greens in a separate mesh bag in the crisper. Beet roots will keep unwrapped in the crisper for three weeks, but they will last for months in the basement or any other cool, dry, dark place. Beets are roots! They like to be underground.
